BEVINCO starts by taking a very precise weekly inventory and then matching usage to sales for each bottle and keg in a bar. Our auditors use a set of scientific scales and BEVINCO’s computerized software program to determine exactly how much alcohol is in every bottle and keg. By matching the ounces used with the bar’s sales report, we can track down losses to the specific brand of liquor. Each week, our clients get a confidential, detailed report that accounts for every single drop of liquor, wine, and beer poured in the bar.
For example, we would weigh a bottle of Jack Daniel’s and might find that your bar has used 7 oz in a week. We would then match this 7 oz usage to the weekly sales report to see what has been sold. If only 4 oz of Jack Daniel’s have actually been rung in, our report will show you that there are 3 oz of Jack Daniel’s missing this week (over 25%).
